It seems I can only install from the testing branch right now.

Also, if I install from the testing branch, what is the process for upgrading to the release branch when it is available?

You see the issue as percona-release setup command enable only main repo for the specified product and disables all other percona repos. As PXC-57 packages are not in the main repo but in testing that is why you were not able to find them.
